Paolo De Simone, born in 1980, is a symbol of Italian culinary excellence. Raised in Cilento, the homeland of the Mediterranean diet, he has transformed his family’s rural traditions into a unique enogastronomic project, rooted in quality and respect for raw ingredients.
His professional journey began as a chef, but he found his true calling in baking with the creation of “Storie di Pane” in Vallo della Lucania. Here, Paolo brought a dream to life: blending tradition and modernity in a space that functions as a bakery, café, market, and bar—an all-encompassing hub dedicated to the authentic flavors of Cilento.

Today, Modus boasts four locations in Milan, including restaurants and gourmet shops. Every dish—from traditional Cilento pizzas to Neapolitan-style variations—carries the authentic taste of its homeland, thanks to a short, controlled supply chain. The flours, doughs, and toppings tell a story of passion, innovation, and deep connection to the land.

Over time, Paolo De Simone decided to take this experience beyond Cilento’s borders, launching Modus, an innovative dining and gastronomy concept in Milan. Modus embodies his philosophy of “Semplice Mangiare” (“Simple Eating”), a return to the essence of food: dishes prepared with seasonal ingredients, sourced almost exclusively from Cilento, such as bluefish, fresh vegetables, and staple products of the Mediterranean diet.

Paolo De Simone is not just an award-winning baker and pizzaiolo but a true ambassador of Cilento culture, transforming every recipe into a journey of flavors. His mission is clear: to celebrate the quality and heritage of his land, bringing tradition to the table with elegance and simplicity, always with a focus on nature and sustainability.
